Oyster Dressing:

A slight correction - Susan is making Pumpkin Pie, the Squash Casserole mentioned in an earlier post, and the Paula Deen version of Oyster Dressing.   Meredith and Connie are helping, and I’m in the basement, making CDs for Marlyce and Connie of some Christmas music Oprah Winfrey had on her show.

Remarkably similar to my brother-in-law's oyster stuffing recipe. He told me it came out of Southern Living magazine.

Oyster dressing is a Southern thing. And I *nomnomnom* understand and stuff myself.

Actually, my food tastes are weird due to my family background and exposures. The 'southern' is because the Dayton area is close enough to the no-kidding South that some of that comes up and filters in.

Maryland is like that: Northern but definite Southern influences.

I didn't do oyster dressing yesterday but I did eat an oyster sampler, on the half shell. Does that count?

I have a slight Penzey's "problem" in that I am addicted to their spices. Let's just say that I've already received two shipments from them this Winter holiday season! I love their Bicennial Rub and Viatnemese Cinnamon!

Yeah, Penzey's stuff is fantastic. They have a store in the next suburb over, which is useful, since we only use their spices.

I should also add that the spices that we use the heaviest are cloves, nutmeg, cinnamon, garlic and black pepper. Simple stuff.

They have about five different cinnamons, as I recall. You're talking to someone who *loves* cinnamon.

Oooh nomnomnom, thanks for the oyster recipes. When I was in downstate Illinois I kept running into oyster-corn casserole, apparently THE thing to bring to potlucks. Canned oysters, I guess, since the oyster beds of the Illinois River are notoriously unproductive. Good stuff though.

I have a recurring fantasy about Penzey's. Sometime in early December I receive the Great God Almighty Baker's Gift Crate ... and 3 weeks of uninterrupted kitchen time to use it up. A Christmas miracle! Behold and weep:
