Garlicky Broth with Kale, Sweet Potatoes, and other Veggies

Passed along to my by my chiropractor’s assistant, this is a delicious soup and an easy way to get veggie with it. (I can’t leave a recipe alone, so I made some modifications...mostly by adding carrots and celery.)

2 ½ tsp olive oil

1 large onion, chopped

Carrots and celery (3ish of each)

3 ½ tsp dried Italian herbs

8 cups vegetable broth (I used home made chicken broth.)

2 cans cannellini beans, rinsed and dried

1 pound sweet potatoes, scrubbed and diced

4 ounces kale (I have no idea how much 4 ounces of kale is! I used one bunch.), tough stems removed and leaves coarsely chopped

12 medium garlic loves, minced

Salt and pepper to taste.

Heat oil in a large pot over medium heat. Add oinion, carrot, celery and herbs. Sauté until onion is soft and golden (about 6 minutes).

Stir in broth, beans, sweet potatoes, and kale. Bring just to a boil. Reduce heat to low and simmer for 10 minutes.

Add garlic. Simmer until sweet potatoes and greens are tender, 15-20 minutes. Season with salt and pepper.

We may have added some Kielbasa as well. :)
