has a very sticky floor due to a major spillage of creme de menthe syrup whilst making grasshopper pie yesterday.
Grasshopper Pie
Crust:
24 crushed oreo crumbs
1/3 cup melted butter
Press into 9 inch pie pan and freeze till ready to fill.
Pie:
1 pint heavy whipping cream, whipped to soft peaks
1 package softened cream cheese
1 small package dark chocolate instant pudding mix
1 cup milk
½ teaspoon mint extract (or slightly more to taste
½ cup powdered sugar
Few drops green food coloring
Whip cream. Beat cream cheese till smooth, and then beat together with whipped cream. Don’t over beat though. Reserve 1/3 of the cream cheese/whipped cream mixture for topping. Combine pudding mix with milk, then fold together with the 2/3 remaining cream cheese/whipped cream mixture. Spread into prepared pie crust.
Add mint extract, powdered sugar and green food coloring to remaining cream cheese/whipped cream mixture. Stir well. Spread over chocolate pudding in pie crust - spread to edges. Top with chocolate shavings or crushed Oreos. Yummy!
