Chili

2 lbs ground beef

½ onion, cubed

½ green pepper, cubed

2-3 cloves garlic, diced (I add half of the onion, peppers and garlic during the browning stage and half later)

1 pkg chili mix

1 lg can tomato sauce

1 can diced, peeled tomatoes

water

½ can cream style corn

1 can dark red kidney beans, drained

1 can light red kidney beans, drained

1 can black beans, drained

1 can pinto beans, drained

Brown ground beef in skillet w/ half of the onion, peppers and garlic.  I season w/ Season All, Mrs. Dash Original and black pepper.  When browned, drain off fat into a disposable container and transfer to a larger pot (3 qt.).  Add tomato sauce, diced tomatoes, chili mix and a large can of water.  Mix well, bring to boil and reduce heat to medium.  Allow to simmer for about half an hour.  After half an hour, mix in the beans, cream corn and remaining onion, peppers and garlic.  Allow to warm through.  Serve over rice, or hot dogs or hamburgers or baked potatoes or in an omelet… w/ cheese, onion, sour cream, crackers, tortilla chips, corn muffins…
