We had friends over for Xmas and I cooked a crown roast of pork which is something I’d wanted to try for a long time. Its essentially two pork rib roast tied together in a circle. I bought two roasts from Costco, and pulled each into a semicircle with string and then tied the two together. It was easier than I thought it would be. Filled the top portion with a cornbread, pear and cider stuffing and put some more under it while it cooked. Covered the rib ends and the stuffing with tinfoil until it was nearly done. I thought it came out pretty good. Next time I’m coking for 8-14 friends maybe I’ll give it another try. To round out the meal we had cauliflower with a sprinkle of parmigiana, carrots with tarragon, potatoes fried in goose fat, spinach salad with a bacon, mustard, horseradish dressing, and a bouche de Noel with mutant mushrooms crafted by my SO. That and a surfeit of wine made for a pleasant meal. May have pictures later.
