Vegetarian-ish

I have decided to go vegetarian-ish. I'm not doing it for moral reasons or political reasons, but more for health and monetary reasons. This means that when I really want to, when it is more convenient, I will eat meat. Many fast food restaurants serve mostly meat items and things such as pot-lucks frequently have hidden meat items that can trick vegetarians. I also really love meat and don't want to give it up totally. My goal is for about 75% vegetarianism.

In my home I will strive for meatlessness. Fresh food, healthy food, creative food, should be the goal. I have been excitedly looking for new recipes, new tactics, and new foods to try. Maybe, hopefully, I will get into canning my own food to use later. I have started searching for new recipes and trying new things. Oh, the excitement! Creating fulfilling meals without meat has been a challenge, but it has been well worth it! Some of my favorites have been "Sweet Potato Burritos", "Cheesy Cauliflower Bake", and I am hoping that "Falafel with Cucumber Sauce" turns out as well as it sounds. I am also looking forward to experimenting with tofu to see if I can do that well too.

I am looking at this as a challenge to stretch, grow, and hopefully become more healthy. This, along with gardening, hopefully canning, and all of the other ways I have grown these past few years, have me excited about the future. I feel like an adult, being productive and healthy, learning and growing.
