Well, technically, beef doesn't really ever go "bad." It kinda ages. But a grind will cause it to age much faster, and to the point where it isn't so much unsafe, but more inedible.
Anyway, no more than 3 days is my rule of thumb. Smell it. If ti smells funky, throw it our. Beef is like $2 a pound.
Oh, and if you're making burgers, go for the stuff with the highest meat/fat content, like 75/25 or 80/20.
And don't get all fancy with the seasonings. Yeah, sure, chipotle blue cheese sounds great, but honestly it's a bad idea. Just simple salt and pepper. No garlic. No chilli powder. Just salt and pepper.
I use the more fatty stuff for burgers. And I go for worcestershire and onion powder. Knead that in while forming the patty, grill it (yes, to medium), and you got yourself a little slice of heaven.
