Standard everyday iPod, or iPod Nano, depending on how much storage she needs. They're so easy, a dirty unwashed hippie could use them. You know, Mac people.
This might sound odd, so feel free to ignore me. She needs a Palm (probably a Zire 72, 30-something). The Palm MP3 player looks just like Real Player. Loading MP3's onto the Palm is as easy as copying (drag'n'dropping) them to the installer and syncronizing. With SD cards, you can have up 1~2GB of music. With the Palm she also gets a nice, big, bright touchscreen. That's my suggestion anyway; I know you can get a Zire 72 for about $150 on eBay, and a 31/32 is a third of that (only difference is the 31 lacks a camera).
I suggest the Palm, because the only non-iPod player I've ever used is my Digital Box, and while loading it is as simple as copying MP3's to a folder, it locks up too much for me to recommend it to a non-gadgeteer.
Pretty much anything will do the trick. iPods and iTunes have things streamlined and easy pretty well from everything I've seen, so my reccomendation leans towards it, but certainly not necessary.
Ipod mini. Even my little brother can use one of those! (and despite being part of the computer generation, he's really not the brightest crayon in the box)
But yeah, ipods come with itunes, which makes it abominably easy to shove CD's onto your computer, and after five minutes of fiddling around with the wheel, I'm pretty sure your mother will have a good handle on how to use it.
I echo the iPod sentiment. When you put a music CD in, iTunes pops up and it's got an "Import CD" button. Hit that, and the files on the CD are copied to the PC and converted into an iPod-friendly format. Very easy to use. You really can't go wrong with the iPod.
