Thank you :) Those have become my favorite moments between Rory and Rose. I don't know how to explain it well, but I think that in a world without the Doctor they would have been great for each other. And if not romantically, definitely in a friendship. Both are very extraordinary characters in my opinion - willing to not take the spotlight and so loyal to the people they love. So for me, they just fit. And I'm glad that you love how I've written Rose because she is by far one of my most favorite characters :)
lol - I wasn't originally planning to write an outburst from Eleven, but the thought of Amy just digging at him - how else could he react? It's already a sore spot and she just kept poking at it! And I think that when it comes from the Doctor, and Eleven especially, him (1) yelling at someone, and/or (2) walking away from them would be so hurtful. "Forcing" the Doctor to do something doesn't work, he has to do it on his own if he does it at all. A supervisor of mine and I talked about her character one day and he came up with a description for her - she has a sense of entitlement. Amy comes off as being entitled to know this information (which is why I dislike how she talks to the Dream Lord in Amy's Choice where she thinks she knows everything about the Doctor...).
And jealousy - I really can't get enough of it when the Doctor's feeling it lol.
I was waiting for the same exact thing! I kept mumbling to myself (and the tv - my bf kept looking at me funny, can't imagine why...) that she wished he trusted her most. I actually gasped and yelled, "NO YOU'RE NOT!" when she said that. Where in the world could she have gotten that, I don't know.
He's a fan....but he's not a fan lol However, it didn't take him too long to get used to it and he might say he doesn't but he's such an enabler :P

It is so completely Moffat. Those were my thoughts on DT leaving too. I wish he could have had all the niceness that has happened with the show (HD and pretty effects etc.), but I wouldn't have wanted to see his character change which it would have.
