2 cans Rotel
1 can black beans
1 can kidney beans
1 can pinto beans
1 lg. can crushed or diced tomatoes, however you like it
1 lb. ground turkey, beef, or chicken
1 sm. can green chilis
2-3 ancho chili peppers
Texas chili kit
1 onion chopped
brown the meat in a stock pot with the can of green chiles (don't drain them). drain the fat & liquid and remove from pan. in the same pan saute the onions. add the meat back, then the can of tomatoes and cans of beans. i usually drain the black beans, but don't drain the others. add the seasoning packets from the chili kit, except for the masa.
roast the ancho chilis under your oven's broiler for a few minutes, until the skin is slightly blackened and wrinkly. let them cool and then peel the skin off. chop the tops off, remove the seeds, and chop them up. then add to the pot. let it simmer for 30 mins or so (or you can use a crockpot). i usually add about a tsp. of sugar here & a tsp. of unsweetened cocoa powder. about 1/2 a bottle of beer adds some nice flavor too. you can add some water if it's too thick.
when you're about ready to eat it, mix the packet of masa from the chili kit with a little milk, then stir into the chili. simmer for about 15 more minutes.
tada! you're done! eat with fritos and cheese and sour cream!
