"Whoever looked at a pumpkin and thought 'I should eat that'?"

- so says one of my favorite dining companions.

Whether it *looks* like a good idea or not is certainly up for debate, but the results of this recipe are undeniably delicious.  This is a fantastic main dish dinner for a 2-3 people, and is perfect served with some tangy salad and crusty bread or good crackers.  It's rich, comforting, and a great antidote to stress.

What you need:
A nice sized (2 lb-ish) pie pumpkin, top removed and seeds scraped out
1 cup milk and 1/2 cup sour cream OR 1/2 cup cream
1 cup shredded sharp cheese (cheddar, gruyere, etc)
1/2 c. chicken or veggie broth (more if you want the final product thinner)
2 cloves garlic, chopped
Smoked jalepeno (1 whole)- optional
salt and pepper to taste

Put all ingredients into pumpkin, and put lid back on pumpkin.  Bake at 350*F in a roasting pan until pumpkin is burnished and cooked through.  To serve, gently scrape meat from sides of pumpkin and stir into cream mixture.   Scoop out and serve as a thick soup with crackers or bread.

Can also increase liquid content and toss with fresh, buttered egg noodles.
