Somehow the other day, my coworkers and I got into a conversation about amazing foods we've experienced in life. I talked about eating Eggs Neptune one time with
Apeliotes in DC somewhere and never being able to find it anywhere else.
So for the next couple of days, all I could think about was Eggs Neptune. And tonight I made it.

But instead of making the hollandaise from scratch, I made it from a packet. Instead of poaching them on the stovetop, I used a microwave poacher. And instead of using purple onion, I used green onion.
