What a weekend.
The trip was beautiful and magical and I came home feeling tan and skinny and sultry.

Ive been cooking for James every night, drinking wine by myself and overall feeling so wonderful. I can see why some women WANT to be housewives. It's kind of awesome!

I made Crab Cakes 2 nights ago with fresh, very expensive crab from the farmer's market. Of course I had to buy a pound so I needed a leftover meal also...I made this:

2 small shallots
1 clove garlic
2 carrots, chopped
1 small potato, chopped (thickener)
Season (kosher salt, pepper, cayanne, celery salt)
Sauté

Add half can of low sodium organic chicken stock
And 2 bay leaves
Cook on medium until carrot and potato are cooked through
Remove bay leaves Cuisenart/blend until smooth

Add 1/2 can corn
Add 1/2 lb fresh crab
Add one tbs creme fraiche (to taste)

Sprinkle bowls with green onion

4 appetizer servings or 2 meal sized servings Enjoy!
