The Miracle of Cooking...

If all goes as planned I'll have cooked all the days I'm home this week...I've been pretty bad about last minute take out so I'm hoping planning will work. I've also stocked up on healthy things for breakfast/lunch/snacks at home. I don't think I've been this orgnized yet this year!

This week's menu

Sunday - braised pork chops with mashed potatoes and LOTS of broccoli
Monday - "Tomato Basil Pasta" (linguini with chicken breast, tomatos, garlic and basi)
Tuesday - Onion chicken with rice and broccoli
Wednesday - Porchini/Crimini mushroom pasta with grilled asparagus
Thursday - Sliced beef tenderloin over gorgonzola risotto with grilled asparagus and molten chocolate soufles (dessert just because it's Valentines!)
Friday - out somewhere...it's always date night
Weekend is a loss with dinner at our friends Saturday - next time I'll cook won't be before Sunday

I'm trying to keep red meat to once a week (I guess I did that if you count pork at "the other white meat" ;-) and to sneak in one meatless dinner ...both of these are tough with Bret! I need to mix in a lot more fish though...I virtually always get a fish/shellfish thing when we go out for dinner - but I should cook it once or twice a week at home too.
