Holy food mash up, Batman!
I combined three recipes,
this one for waffle tacos, the french toast waffles that have become a breakfast stand by at our house, and a simple salsa recipe.
The results were flipping fantastic!
Made the french toast waffle (egg and milk in a bowl, soak the bread like french toast, cook in waffle iron) but substituted the vanilla I usually add for a bit of cumin, chili powder and ground dried chilis - not too much, just enough to make them savoury.
Made some rice, heated up a can of black beans in a pan (bean juice an all). Stirred them together with a bit of cayanne pepper for spice. While that was mixing and heating a bit more, I chopped up the veggies for a simple salsa (today I used tomatoes, red and green bell pepper, garlic and onion) and added them to the pan (might want to cook the onions a touch, or use red onion, if you don't like the taste of raw onions. ditto the garlic) Once everything was a touch warm, I served the rice/bean/veggie mix on top of the waffles with a dollop of sour cream.
Soooooooooooooo good. GENIUS! Geniousity, even! Also: fast. I was fucking hungry so this was a good thing.
