Adventures in cooking

Doug is the cook at our house, and he's a fantastic cook. But when he's gone (and he's often traveling for a week at a time), it falls back to me. I'm a decent cook, though not a great one. I want to say stuff about the cooking (cool jello idea, yay zucchini bread and other stuff) but I keep getting hung up on the OMG! Look at Carter! He is so grown up!

I really need to figure out how to post pictures on a free LJ account. I've been posting them on facebook like crazy, but most of my LJ/DW friends don't cross over.

I have a couple staple dishes that I make frequently with whatever veggies we have on hand (most commonly peppers, squash, eggplant, etc):

stir-fry: tofu (I'm vegetarian) + veggies. Add peanut sauce for a more Thai dish, just plain soy sauce for something very basic, or coconut milk/green curry paste for green curry! I also use rice noodles a lot more often than rice because they cook so much faster.

chili: again, saute veggies, add beans, tomatoes, chili/seasoning, etc.

spaghetti: same basic idea...saute veggies, add (fake) ground beef, tomato sauce, season w/ fresh herbs, put on noodles.
