Baby Spinach and Pea Sprout Salad, with as of yet unnamed dressing.
Dressing:
1 Tbs chopped lemongrass (I got it prepackaged from the freezer at my Asian market.)
1 Tbs Lime juice
1 tbs Hoisin Sauce
2 tsp Sweet Chili Sause
1 tsp yellow curry powder
2 tsp sesame seeds
Mix together and toss over salad below. I would say this makes enough dressing for 4 side salad portions or 2-3 dinner portions, but its up to your taste.
Salad:
In what ever proportions you like best.
Baby Spinach
Pea Sprouts
Raisins (also good with other fruits, keep in mind that the dressing is sweet/sour. Would go well with Mandarin oranges as well if you like that sort of thing.)
Sliced Almonds (sub in any nut you like, or no nuts, what ever)
So yeah, give it a try, and If you come up with a name for the dressing I would love to hear it!
This is pretty low cal, but it is high in salt. I am trying to work on that. I was going to add soy sauce, but there was already sooo much salt. The Hoisin Sauce is not really required, but it is a flavor that I like and seems to pull things together nicely.
