The one thing that went right

Here's the meat that we had for dinner:

marinate chicken thighs in equal parts red wine vinegar and olive oil
plus garlic (I used three or four cloves for 3.5 lbs of chicken) and
some oregano

Dredge in breadcrumbs mixed with romano (or parm).

Bake on racks over cookie sheet at 400 for 20 minutes.

DH and I thought it was mighty tasty.  The girls were unimpressed, but I wasn't cooking anything special for them tonight.  They made do with peas.
