Meat Cake and Red Velvet Cupcakes

The holidays are generally awesome for me. It's a time to share good times and food with good company. True, it's not always pretty, the holidays can be downright ugly at times, but yesterday was really sweet.

For several months, Shellers and I have been brainstorming this dinner night. One day he would do the main entree and I would do the dessert and vice versa. (Something to that effect.) Well, Friday was our day to try it out. STLAngel and I went shopping and picked up all the ingredients and then we started our portion of the meal - dessert!

The recipe that we were trying was from the Food Network for Red Velvet Cupcakes. At first, we hit a snag that required a couple of cold beers - Winter Cask Ale - and a recess from baking. Once we were relaxed and ready to bake, we got cracking. When the first batch of cupcakes came out, we sampled them and were a bit concerned. It tasted like white cake...gone RED, RED, RED. Red Velvet cake is cake with cocoa powder in it and I couldn't taste the cocoa. Well, STLAngel and I continued on and creamed the frosting and once the frosting met the cupcakes... The cupcakes were transformed! IT was amazing and shockingly good.

Shellers did the heavy lifting with baking this huge MeatCake. Okay, it was really a meatloaf, but it was HUGE. It occupied the space of a 9"x12" pan! It was insane, but it was OH SO GOOD. It was moist, flavorful and downright awesome. I normally smother my meatloaf with ketchup, but this MeatCake didn't need any condiments. And his garlic mashed potatoes were so delicious!

On top of all the good food was awesome company - Shellers, SA_AM, STAngel and my coworker BBallRef. It was so cool to just sit around and have a good meal, drinks and just relax....
