I love almost anything by George MacDonald. The Light Princess or the Princess and the Goblins are probably the best to start with, but the Wise Woman (sometimes called the Lost Princess) is my all-time fave.

It's a morality fairy tale about a princess who is spoiled rotten and her parents ask this wise woman to help them with her and she carries her off to her cottage and through various things teaches her to be a worthy human being. There is also a shepherd girl who the wise woman takes in for the same purpose who is incredibly vain, but she hasn't learned so well by the end of the story.
I guess I find it important to mention that George MacDonald was one of the first fantasy writers (late 1800s), and was CS Lewis' 'hero.' If fairy tales don't interest you, he wrote adult fantasy, 'Christian fiction' and contemplative stuff as well. Then there's his sermons.

The complete texts of some of his writings are available to read online as well, handy since some of his best stuff is out of print.
