I decided to adapt my mom's tasty beef stroganoff to my ovo-lacto-vegetarian-ness. Here's with what I came up:
Ingredients
- Fake steak strips (I like MorningStar Farms' version.)
- 16oz sour cream (I used the fat free kind, 'cuz I'm single and lookin'.)
- Dill
- Black pepper
- A coupla' medium yellow onions (They're my standard onion unit™.)
- Some shiitake mushrooms (I'm not a mushroom fan, but these 'shrooms taste kinda' meaty.)
- Olive oil for sautéing stuff (Mammy uses butta', but she's also on like blood pressure and cholesterol medicine. Also, EVOO is my standard fat.)
- Whole wheat, no-yolk egg noodles (I try to use whole grains when possible.)
- Low sodium vegetable broth (I cook my rice and noodly things in broth as it gives 'em more flava'.)
Prep
- Get everything out. Verify you have it. Adults don't need to run to the store in the middle of cooking a meal because they are responsible.
- Finely dice the onions.
- Dice the 'shrooms.
- Start heating the broth for cooking the noodles.
Instructions
- Cook the steak strips exactly how the wee package says. duh.
- Set them aside.
- At some point, the broth is going to be boiling. When it does, follow the noodle-cookin' directions.
- Add a lil' evoo to your pan and heat it to mediumish.
- When the oil's hot, sauté your onions. Since you pre-diced them, you can feel like a cooking show host by just dumping them in.
- When the onions are nearly sautéed, add and sauté the 'shrooms.
- Add the sour cream, pepper, and dill. If you're one of those salt/MSG types, add them too.
- Add the steak strips to warm them up a lil'.
- Drain your noodles: Nobody wants a watery cream-sauce.
- Put your well drained noodles on a plate and top with the sauce.
- Voilà! "Beef" Stroganoff!
