I wanted some red beans and rice Saturday, so I thought I'd add a lil' to it to make it a full meal.
Ingredients
- 1 can red kidney beans (Why is almost everything in this recipe red? I swear I'm not a colorist.)
- 1c brown rice (Once you go brown, you never go back.)
- 2c(ish) vegetable broth (Steaming your rice inwater?! How Provençal.)
- 1 medium onion (Can't you just feel the dragon breath forming?)
- 6 cloves garlic (So yeah, I hope you weren't planning on kissing anyone anytime soon.)
- 1c chopped broccoli (You might wanna' go with bell peppers for something more red-beans-and-rice like, but broccoli makes me feel like I'm a real vegetarian.)
- 2-3T chili powder (Fiery, like that crazy redhead down the hall.)
- 1T ground cumin seed (This whole business is starting to get a lil' chili like.)
- Black pepper to taste (I like tons of pepper.)
- Cayenne pepper to taste (Some people don't like spicy: Those boring people need to take some pepto.)
- Sharp cheddar cheese to taste (I like my cheese like my personality, overpowering.)
Instructions
- Sauté your onions (and possibly your garlic if you swing that way) in a pot large enough to hold everything.
- Add the beans, rice, broccoli, and broth to the mix.
- Bring to a boil.
- Reduce heat, cover, and simmer for 10-15ish minutes, until the rice is cooked.
- Serve with the peppers and some cheese.
