1 pound of ground meat things of your choice (beef, turkey, tofu-d-beast, whatever)
8 potatoes, boiled and mashed beautifully
1 can of whole kernel corn
1 can of creamed corn
13x9 baking pan, such as you'd make brownies in. Other sizes can be used, but not much smaller than that
a cookie sheet large enough to go under the baking pan, to prevent any spills (optional)
Substitutions:
For potatoes boiled and mashed, substitute 5-6 cups of instant mashed potatoes, prepared as directed on box
For corn, substitute 2 cans of whole kernel corn, and dot the top of the corn layer with small chunks of butter 6-10 tsp.)
Heat oven to 350 Fahrenheit.
Prepare potatoes, whether using from whole potatoes or mixing from the box. Set aside.
Brown the meat choice in a skillet. Season with onion powder, garlic powder, celery salt, salt and pepper to taste. Don't worry -- if you put in too little now, you can add it when you eat it!
Dump the meat into the baking pan and spread it around. Drain the liquid from the whole kernel corn, dump it on top. If using creamed corn, dump that on next, spread them around. (If using a second can of kernel corn, drain the liquid, spread the corn around, and then dot the top of the corn layer with 6-10 pats of butter, each about a teaspoon in size. The number you use depends on the size of the pan.)
Next, layer the mashed potatoes over the top in scoops, and then level out. Do not mush the potatoes to the very edge of the pan, as that will cause it to bubble over! Now you have a layered casserole.
Put the baking pan onto the baking sheet if you have one, and pop it into the oven at 350 F. for about 20 minutes, to turn the tops of the potatoes gently brown. Take it out and serve it up.
This keeps well in the fridge for the standard 3-6 days, but because of the potatoes does not do well frozen, so you have to eat it all that week.
* This dish often requires you to add more salt, pepper, etc. when you sit down to eat it. It's sort of intended to be a bit bland, so that you can spice it up. If you like garlic, add more to the meat when you cook it, etc. When you get adventurous you can add onions to the meat, or a layer of green beans, or a layer of tomatoes... these things depend on personal taste.
