Sorry, I didn't see this until now. I've been at work most of the weekend, like I usually am, so I'm not online really much at all. I might pop in occasionally or do a drive-by posting from my phone (such as with the soy milk thing), but that's it. :P
You'll need:
- your food processor - a 15 oz can of chickpeas, drained - lemon juice (fresh is best, but from concentrate is OK) - olive oil - 1 clove garlic, peeled - cumin and salt TT - cilantro for garnish (optional)
First, whiz the chickpeas and garlic together until they're broken up. Drizzle in about a tablespoon of lemon juice, then keep the processor running and begin drizzling in olive oil. Do this slowly, and only enough so that it becomes the consistency you want in your hummus. If you like it thick, add less; if you like it a bit gooier, add more. Season with a little bit of salt and cumin at a time, pulsing it each time you add some and scraping down the sides of the processor to make sure all ingredients are thoroughly incorporated.
If you want to make it look pretty, put it in a nice dish, smooth out the top, and make a small well in it. Pour a little more olive oil into the well for presentation, and use cilantro for garnish. That's it! :)
