Carbs: I find that when I eat reasonable portions, there aren't any carbs that I eat now that hurt me, only keep me on maintenance. I eat very little in the way of potatoes, only very grainy bread and only whole grain pasta, when I eat that. My trouble carb is white rice but I've gotten to the point where I won't/can't eat enough to make me gain unless I eat a lot the rest of the day. For me it's most definitely the meat rather than the carbs which drags me down.
Flax seed: Good idea and it would be a better dietary source. I need to take a good look at it. I don't mind taking the pills and there is a liquid form that has a lot more Omega-3 but my levels are fine.
Small meals and fiber: You're very right about small meals! When I was in my major power weightloss stage I ate 5 small meals a day and that ramped up my metabolism well. I do eat a lot of fiber and take fiber supplements (about 4g/day) as well because I've had some problems with diverticulitis and fiber has worked well against it.
