Hi! Still not computer, I'm at the library so I decided to jump on. Just copied this recipe out for the Babblers and thought I'd post it here as a way of saying "Hey!" I'm attempting an lj-cut but it usually dosn't like me...



NO-BAKE CHOCOLATE ECLAIR CAKE

Gotta love the easy recipes.You MUST make this at least a day in advance. It improves so much from sitting in the fridge. Two or three days in advance would be even better.

Ingredients:
One box Keebler club crackers.
 2 boxes french vanilla instant pudding
2 tubs Extra Creamy Cool Whip
1 can extra dark chocolate frosting (the regular kind, not whipped or pourable)
2 cups milk
Directions
Combine pudding and milk until well blended, beat in Cool Whip. Line a 9x13 pan with single layer of crackers Pour about half of the pudding mixture over crackers Add another single layers of crackers Top with additional pudding mixture Again with the crackers. Cover and refrigerate overnight Put can of frosting in microwave on high for 1 minute Pour over top layer of crackers. Cover and let sit as long as possible before serving
What happens is,the crackers absorb the pudding and chocolate mixture and become a kind of light pastry. It's so yummy! Or so I've been told. I don't actually eat this crap. *g*
You can use sugar free pudding, skim milk, light Cool Whip, and low fat crackers if you want but I can't be responsible. It may suck.

So now that I've made the world a tastier place, back to the grind... *hugglies*
