Exactly what I was thinking :-) I think that in S1 Jack was still in love with the Doctor(9), or the idea he had of the Doctor, and took Ianto only as someone to pass the time until he can be with him (the Doctor) again.
He also needed to get his answers and that was another thing that could have changed his relationship with him. During spending the year on the Valiant I think he had quite a lot of time to revalue approach to his whole life and everybody in it and to realise what is important for him.
When he came back he was surprised that all his team moved on with their lives, and actually don't need him.
I also think that there is huge change in Ianto's character in S2. He is much more open, confident, easy-going and part of the team. I like the way Ianto's and Jack's relationship changed in S2. You can see that they are equals, I absolutely love the way Ianto is teasing Jack (especially in Sleeper ;-D )
There is also deeper connection between them, they seem to interact with each other on another level then with the others. It seems sometimes they can communicate by just a look ar a gesture. That can indicate the depth of the feelings they have for each other as well as the amount of time they spend together.
As for Gwen, I think that Jack confided in her just because she already knew about him being immortal. I think their interaction is like between best friend/family with a huge hero worship from her part especially in S1. They don't seem to flirt so much though (which I think is pretty weird as Jack flirts with anything that has a post code and some other things that don't ;-)).
Jack is keeping distance from Gwen (in the sexual way), I am sure that if he wanted her, the only thing he would have to do was to ask. I think in some way he is trying to shield her from himself because he knows that if they had sex she would fall in love with him and he would break her heart. She is also the only one in the team who has some life outside Torchwood and he is trying to save that for her because that is where she takes her humanity from.
