Following the Lincoln Cathedral Cookery Book into the season of Lent not surprisingly the recipes for this section centre on fish dishes. The text given is:
Easter is preceded by a forty-day Fast, called Lent, designed to recall the sufferings of Jesus Christ in the wilderness. Although eggs, meat and fats were not allowed, fish eating was permitted. Traditionally the Customary, or non-money rent, of Fishfee or Fishsilver was paid to the local lord on Ash Wednesday, the first day of Lent.
Scandinavian Baked Cod
6 rashers smoked bacon
100g mushrooms
4 thick slices of cod
50 g butter
Paprika
Sauce:
50 g butter
40g flour
300 ml milk
Seasoning
Set oven at 180C. Butter an oven-proof dish. Cut up rashers finely. Place 3 prepared rashers on base ofdish, place raw fish on top and ad remaining rashers. Saute mushrooms, cut up finely and put on top of cod and bacon.
Make white sauce. Pour over ingredients in ovenproof dish and sprinkle liberally with paprika. Cook for 45 minutes.
I don't know how "Scandinavian" this recipe actually is and I cut the proportions way down. Verdict - very yummy!
