so - the beer and cider making process continues. we bottled it last week, and are now in the "waiting phase". fermentation can happen in as little as a week, but flavour takes time to develop. my recipe suggests waiting "several months". our impatience has determined that several is equal to 2 months and we're going to crack open the home-made beer and cider in honour of canada day. expect pictures via facebook when we finally taste the cider - i've been attempting to chronicle the process via digital photos.

in other cider news - strongbow cans now come in an 8-pack, which makes carrying several of them to the cash-register much easier! and the Nova Scotia Liquor Commission stores have started carrying another dry cider - gaymers. i tried some yesterday, and it was pretty good.

on an unrelated note - i don't think i will ever get sick of watching dr. horrible's sing-along blog. i watched it again tonight for the 4th or 5th time. if someone were to put on a live stage production of that show, i think i might die of excitement. although, it just wouldn't be the same without neil patrick harris and nathan fillion.

and again unrelated...i've been eating a lot of granola lately. store-bought granola is expensive, and too sweet for me! so, i've perfected my home-made granola recipe, and it's full of good-for-you-things. it's a combination of a bunch of recipes, but it's yummy, and pretty easy.

Ingredients:
1/3 cup vegetable oil
2 tbsp water
1 tbsp ground cinnamon
1/4 cup honey
1/4 cup maple syrup

4 cups old-fashioned oats
1 cup wheat bran
5 tbsp ground flaxseed
1 cup raw pumpkin seeds
1 cup whole almonds

- Adjust oven racks to middle positions.
- Preheat to 275 degrees.
- Coat two metal cookie sheets with cooking spray and set aside.
- Bring oil, syrup, honey, cinnamon, and water to a simmer in a saucepan over low heat.
- Mix oats, wheat bran, flax, pumpkin seeds and almonds in a large bowl.
- Pour oil/maple syrup mixture over oat mixture and stir to combine.
- Pour mixture onto two prepared cookie sheets.
- Squeeze granola in your hands/finger tips to form small clumps.
- Bake for 30 minutes.
- Stir and continue to bake 15 minutes longer.
- Let cool.
- Enjoy.
