Culinary school finals [30 Oct 2003|02:13pm]
sumbody asked me wut finals are like at culinary skool...
finals takes a whole week, 5 days, fer the one class
monday is written and knife skills final
written is everything from temperature to tecniques like what is the internal cooking temperature for chicken or wut are the 3 market forms of veal leg or define coagulation and the are some things like braising and stewing which we have to right out the methods for
and theres sumthin called product ID where they put food in a cup or on a plate and we have to identify it which is hard when u have say worcestershire sauce, soy sauce, and balsamic vinegar all next to each other
last week on a quiz we had salt, baking powder, baking soda, sugar all white powder so thats day one
then we pull menus day 2 we prep all the ingredients for the menu exam
next day is seafood menu
next day meats menu
last day mystery box
and we have a binder due as part of the final
i have a five inch binder with 17 sections, lot of info
and thats finals
