It's not like I had a full weekend planned but there were a few things I wanted to accomplish.
Nope. Not gonna happen. I just don't feel like it.
I had a really delicious and totally unhealthy breakfast. Fried grits, bacon and eggs over easy. For the fried grits you just make an extra large batch the day before, doctor it up however you want (salt, pepper, fake butter [you have to be health conscious you know], cayenne and freshly grated Parmesan), pour it into a loaf pan and let it set up. Then you slice it about 1/4" thick, dredge it lightly in flour and fry to a golden, crunchy brown. Ideally you fry it in bacon fat because let's face it, you could fry a flip flop in bacon fat and it would probably be good, but again, heart healthy, right? So canola oil. I've been hoarding my last pound of bacon in the freezer but broke it out yesterday to thaw. You dip the crunchy (yet creamy inside) grits into the runny yolks and add a bite of bacon. Heaven!
You know, if you look online at the list of foods that nutritionists warn against ever eating and they might vary slightly but every single one will say grits but never mention polenta. You know what the difference between grits and polenta is? Damn little. Grits are made of white corn that's slightly more coarsely ground and polenta is made from finer ground yellow corn. OK, yellow corn has slightly more beta carotene in it but that's it. It's cultural discrimination because grits are seen as a poor and/or Southern food and polenta is Italian cuisine. Such horseshit.
Anywho! It's still -5 degrees outside! But at least the wind is gone and the sun is strong and bright. Tuesday it'll be in the 40s. Yep! Schizophrenic weather ahoy! Usually when I go out on the balcony in the winter to feed the birds I just stick my socked feet into the heavy sandals kept by the door and make sure I have my flannel shirt on. This morning was the full bundling experience. It was cold but not too bad. That doesn't mean that in a few hours when I go down to (hopefully) start my car, clean it off and clear the snow from in front of it I won't be miserable. But not as miserable as I would be doing it in the dark tomorrow morning.
Yesterday I finally checked my mailbox for the first time in nearly 2 weeks and found some lovely cards like a wonderful, whimsical handmade hockey playing moose card from
dine and card from
khaleesian with pictures of her, her husband and their beautiful son (my god he's so big now!) and a belated birthday present from
spasticat with a stand-up desk calendar of vintage cat advertisements. What the hell the head of a black cat with a pink ribbon around its neck has to do with 'Morse's Yellow Dock Blood Purifier' I have no idea. There was also an adorable little tapestry pouch which is the perfect size for my SanDisk Sports Clip audio player that I listen to my audiobooks on at work before we're open and the ear buds. So much classier than the ziplock sandwich bag I was using. *G*
This week I actually have a full schedule at work because the main pricing lady is on vacation. So yesterday I made a big batch of pozole rojo (pork and hominy stew with a rich base made from mild, dried, re-hydrated guajillo peppers, garlic and onions. Delicious!) to take for my lunches. On Thursday I'll splurge and indulge in a mammoth Poncho's breakfast burrito that one of the guys makes a run for every week (their spicy avocado crema is to die for!). For my Christmas dinner I got myself a pretty huge Boston butt pork roast on sale. Plenty of leftovers. It'll be stuffed with slivers of garlic and rubbed with olive oil and fresh rosemary. Then there'll be roasted root vegetables with garlic and lemon and maybe broccoli. I think I'll make another flourless chocolate cake for dessert. Perfect! But I have to make it through the week first. Knowing that I don't have the madness of 'week before Christmas Wally World' to survive makes all the difference.
I might feed the birds an extra helping this afternoon. They're all out their ganging up on the food and the poor little guys are going to need a lot of fuel to keep warm. But right now I'm going to read some more of this epic - more than a million words - literally! (and rather well written) Teen Wolf verse and then I'll do the absolute minimum that I have to do today which is clean the litter box and go start my car.
