It's supposed to be in the low 40s the next 2 days, but unlike today which began partly sunny then slid into overcast, Wed and Thurs we're supposed to have rain. So today was my running around day.
I girded my loins (not as fun as it sounds *G*) and took items back to both Wal-mart and Target that needed to be returned so I wouldn't have to do it after Xmas. To my pleasant surprise I spent less than 5 min in line at Wally World and walked right up to the counter at Target. Huzzah!
I went and paid my electric bill and most of my cable (enough to keep me on the air for now), finally took those books over to sell (wasn't as much as I was hoping but every little bit helps - both the money and getting unused books out of the apartment), stopped by 2 grocery stores and finally, topped up the right front tire with the very slow leak in it that I can't afford to get fixed right now. Luckily it takes nearly a week for the tire to become dangerously low (found that out by accident) but I just don't want any unpleasant surprises when I go out Christmas morning to pick up the bro. Because I don't intend to leave the apartment for the next 2 days.
My Christmas present to myself this year is to give myself the week off from job hunting.
Tomorrow I'm making cookies for the sibling - Oatmeal Scotchies. He loves them but I don't care for them so they're safe for me to have them around the house. Then Thursday it's prep cooking for Christmas.
For noshing beforehand - homemade hummus with not homemade flatbread (for him) and low carb tortillas (for me - actually pretty tasty!).
Christmas dinner will be a Mediterranean pork roast studded with garlic cloves, fresh rosemary, lemon juice and olive oil, with a pan gravy. Potatoes are small Yukon gold, boiled whole, gently smashed flat and cooled (done on Thurs) and browned in garlic scented olive oil. Simple steamed broccoli with butter and lemon zest and dill bread (freezer roll dough, slathered in butter, sprinkled with dried dill and layered in a bundt pan to raise and bake - delicious!)
For dessert I'm making ahead of time on Thurs. - pumpkin pie for the brother and low carb
Gooey Pumpkin Butter Cake for myself, both topped with real whipped cream. Not low fat by any means, but doable without sending my blood sugar through the roof.
