While looking for good representations of tomato/cayenne red (the accent color in my dream kitchen) I got inspired by this blog and it’s picture of tomato bisque.

I don’t like tomato soup. Actually, I love tomato soup…as long as it’s tomato BISQUE which is in a totally different world from your garden variety (pun intended) tomato soup. Today for lunch I made tomato bisque and we had bacon lettuce tomato sandwiches with pepper bacon and rosemary bread (that I made) with dill havarti cheese.
This stuff is AMAZING…and easy to make. Here’s the recipe:
Organic Tomato soup base ( I use Imagine, but it MUST be organic)
1 8oz tub of organic sour cream
¼ pint of organic half and half ( or whipping cream if you don’t have to worry about cholesterol)
1ox serving fresh organic basil
½ oz fresh organic rosemary
1 teaspoon DRIED Organic onions
1/8 teaspoon organic granulated garlic powder
½ teaspoon local honey
If you use any water, use spring water. I don’t but some folks do.
I warm the tomato soup base. While that’s warming (on low) I used my Braun Hand Blender ( I know, it’s sooo 90’s) and it’s food processing attachment to chop the basil while blending the sour cream and half and half together. Once the soup base is simmering around the edges, slowly add the sour cream basil mixture while stirring (with the Braun Hand Blender).
Next add the dried onions. I don’t use fresh onions because they take too long to cook, pre-cooked get all nasty and goopy, but dried onions stay crunchy. If you over cook this stuff, it’s not any good. Keep stirring.
Add the rest of the rosemary, garlic, and the local honey.
Simmer again until just before boiling. Stop stirring and let it rise while turning the heat down (forgot to mention cooking this stuff on a gas stove is the ONLY way to do it properly) to simmer. A couple minutes rolling gently is enough to coalesce all the ingredients sufficiently. Remove from heat and let sit, covered, for five minutes before serving.
