I made
silenttex an apple and cinnamon cake for his birthday, but it came out looking more like a pudding so we ate it with custard. As a pudding it works very well, but it's not really a cake in the serve on plates and eat with fingers style of cake.
100g/4oz butter/marg
100g/4oz caster sugar
1 egg, lightly beaten
100g/4oz plain flour
1 tsp baking powder
2 tbsp milk (optional)
2 large cooking apples, peeled, cored and sliced
2 tbsp caster sugar
1 tsp cinnamon
25g/1 oz almonds, chopped (I left these out)
2 tbsp demerara sugar
Cream the butter and sugar, then beat in the egg and fold in the flour and baking powder.
It's supposed to be a stiff mixture, but if it's too stiff add the milk. It doesn't say what too stiff is, but if I make this again I shall add some milk - I made it without and getting the mix to spread around the tin was a bit of a trial.
Spoon in half the mixture in to a greased and lined 9 inch round cake tin.
Layer on the apple then spinkle the almonds, cinnamon and caster sugar.
Spoon on the rest of the cake mixture.
Sprinkle with demerara sugar.
Bake for 30-35 minutes at 180oC, 350oF, Gas mark 4 until a skewer inserted in the centre comes out clean (this took 45 mins in our fan-assisted oven).
Serve with custard and listen to your loved ones make appreciative noises as they scoff it down.
