Delicious 5 Minute Fudge

Ingredients:

1 2/3 cups granulated sugar
2/3 cups Evaporated Milk ( I use 1 can of Carination evaporated milk- it’s a bit more than 2/3 cups but it makes the fudge creamier)
2 tbsp butter
2 cups EACH miniature marshmallows and chocolate chips ( I use milk chocolate chips)
1 tsp vanilla (artificial vanilla extract works much better here!)

Directions:

Line an 8"x8" square baking pan with waxed paper or aluminum foil set aside
Combine sugar, evaporated milk and butter in a saucepan. Bring to a rolling boil over low heat, stirring constantly (or just about).

Boil 4 minutes. EXACTLY.

Remove from heat

Stir in marshmallows and chocolate chips and stir until melted and combined, add vanilla and stir.

Pour into prepared pan, chill until set and cut into squares.

Please note: that this fudge is very sweet, and I like mine creamy and not grainy. If you use my modifications ( such as the full can of evaporated milk and milk chocolate instead of semi sweet) you'll end up with an end result of a creamy, sinfully sweet, and beautifully indulgent soft fudge. It's incredible.

I cook my fudge on low and I use the entire can of milk- I do this for two reasons( first of all it's going to take a LONG time to bring this to a boil, but trust me the end product is worth it. Do not turn up the heat no matter what your temptation may be- the highest this candy can be cooked at would be a 4, 5 would be pushing it. Have patience. You can cook on medium low or medium high heat if you want, but it will make the fudge much less creamy.

(Be careful how much cooking spray you use to coat the pan, too much and the fudge will be slimy and slippery to little and you'll end up with foil all over it!)

For added dimension, *and my personal favorite fudge flavor of all time) melt white chocolate chips in a bowl, * be sure to add a drop of canola oil to keep from drying out and only heat for a maximum of 20 seconds) add a tsp of mint extract and green food coloring. Do this quickly, or the chocolate will solidify and it's too late!

When the fudge is poured into the pan, pour the green white chocolate mint mixture on the top of the fudge and swirl it around. Place in the fridge to set overnight and enjoy mint chocolate fudge! :)
