Someone suggested this on the bakebakebake community and it just sounds too good to pass up. Won't get to do it for the next couple of weeks, but I'll definitely make them once we're settled back in Farmington...
Fruit Tarts
Press sugar cookie dough into the edges and sides of a muffin tin. Bake according to recipe, but halfway through baking time, pull out to press the cookie dough back down into the pan so it doesn't rise too much.
Blend cream cheese and sugar to sweeten. Layer in the cooled cookie cups.
Fill the cups the rest of the way with cherry pie filling, or whatever fruit suits your fancy! Chill and serve once set!
Now tell me that doesn't sound good!
