two things which are unrelated, but make me happy

For reasons which don't need exploring at this juncture (but which include my own writing, others' writing, fandom in general, work, money, taxes, politics, and the weather) I'm feeling - depressed would be too strong a word, so let's just say I'm feeling low. I also see that many of you are feeling low, or even depressed. So here are two things that make me happy; maybe they will make you happy, too.



German Apple Schmarren (baked pancake)
Adapted from Jewish Cooking in America by Joan Nathan

1/2 cup all-purpose flour
1/2 tsp baking powder
cinnamon and/or ginger and/or ground cloves, to taste (or to "smell"!)
2 eggs
1/2 cup milk
1 apple
1 tbsp butter

Preheat oven to 350F. Mix flour, baking powder, and spices; add the eggs and milk and beat until smooth. Slice the apple into pieces about 1/8" thick and maybe max 1" square/long, and stir the pieces into the batter. Heat an 8" cast-iron skillet on the range, melt the butter in it and spread it around; then pour the batter in and put it in the oven for about 20 minutes, until it's cooked through and a little browned on top. Serves 2. The original recipe suggested confectioner's sugar and lemon on top, but I like maple syrup.

The other two things that are my favoritest breakfasts are French toast made with the sesame semolina bread from my favorite local bakery, and cornmeal waffles. Do not make me choose! They are all wonderful!
