Bacon in My Ziti
a non-conformists mac & cheese
This was an adopted recipe from something I saw on TV. I changed some things as they didn’t actually give the recipe but just showed what the restaurant served. This is a heavy side dish. Since it contains bacon it can be eaten on its own with a side salad. But don’t make it as an accompaniment to something like roast chicken because it really is a heavy ‘mac & cheese’.
Ingredients:
½ diced green onion
¾ of a pack of bacon
1 stick of butter
1 ½ cup of whipping cream
1 box of Ziti pasta
1 med bag of shredded sharp cheddar cheese
1 med bag of shredded Parmesan cheese
1 med bag of Mexican cheese blend
Optional: Salt & Pepper

Pre-heat oven to 350.
Boil pasta in water (add a pinch of salt to water) until almost done. Meaning still a bit undercooked, drain and set aside. The pasta will finish cooking in the oven so don’t worry about it being not cooked well enough.
Fry bacon until fully browned. Add to the bacon and the fat it released the onions and cook at a medium heat. Add half the stick of butter and let it simmer softly. Add whipping cream, slowly, mixing as you go and let it come to a near simmer. Note: don’t cook the bacon and scallions too high or you risk burning them.
Add all the cheeses slowly, mixing well. It should get to a ‘fondue’ consistency. If it’s too thick add some milk to make it flow smoother.
Once the ‘fondue’ consistency has been reached, slowly stir in the drained pasta and the other half of the butter. Add salt/pepper as desired, taste often as the cheese can be salty so only add IF needed. Taste BEFORE moving to the oven-safe casserole.
Add to oven-safe dish, spread the pasta out well. Sprinkle any leftover cheeses over the pasta to create a nice golden cheese crust.
Bake for 20 min at 350. Serves as a side dish like 8 or 9 people, as a main meal a bit less.
Wine Suggestion: A nice chilled pinot grigio.
