Weeks Three and Four of CSA

Last week was week three of my CSA subscription and it was a nice assortment of veggies. We had lettuce again, Red Chard, Spring Onion/Scallions, Pea Pods, beautiful Cherries, and potted Chives.

After three weeks in a row of getting huge amounts of scallions in my box, I finally succumbed to desperation and made a scallion potato soup ala Potato Leek soup and the substitution worked beautifully.

Will definitely remember that if I ever get that many scallions backed up in the refrigerator. They last a long time if they are cleaned and kept cold, but after a while, you just have too darn many of the things to use them on top of miso soup and as the garnish they usually are.

I'll post the scallion soup recipe if there's interest, but it's really only a leek soup recipe changing out the two large/three small leeks for two handfuls of scallions.

Week four delivery came a few days ago. The greens are on their way out so we had smaller bags of more things: both red and green leaf lettuces and red and green swiss chard. We also had potted cilantro, more scallions (not too many this time, I think they must be on their way out too), red beets, and blueberries.
