1: Yin & Yang Soup: Black Bean Soup with Lime Sour Cream and White Bean Soup with
Fried Tortillas (half of each soup in a bowl)
2: Crab Salad: Roasted Corn and Polenta Cake, topped with Jumbo Lump Crabmeat and
Sauteed Snow Peas, served with a duo of sauces- roasted red
pepper and jalapeno-avocado.
3: Scallop & Endive: Seared Diver Scallop served over Vanilla Bean-Blood Orange Braised
Endive and a Apple Cider Reduction
4: Veal & Lentils: Roasted Veal Chop served over Braised Lentils, Pearl Onions,
Carrots, Celery Root and Parsnip with a Rich Red Wine Sauce
5: Double Chocolate: Double Chocolate Cake soaked in Vanilla Simple Syrup, served with
Caramel Crisp and Espresso Anglaise
The day was very long and at the end of it all I was declared the winner. The event went a lot smoother than the last two. It's nice to see how it has grown for the better over the years. The breakfast sunday morning really hit the spot too, biscuits and gravy as well as roasted jalapeno and corn scrambled eggs with fresh thyme and tomatoes.
