IC2: The Reckoning

Well I know it's a few days since The Reckoning, but I thought I'd better write about the experience and my dishes. Much like my bro, the secret ingredients caught me by complete surprise, but after the initial shock I spent a good 15-20 minutes I bet writing my menu, starting with a protein then matching it with one of the secret ingredients, following that with a sauce, a starch and a vegetable. The day was extremely long and tiring, but certainly worth it in my eyes. I think everyone had a great time and would gladly come back for another one. My dishes were as follows:
1) Poached Lobster & Shrimp served over sauteed zucchini and squash "spaghetti" with a coconut-lemongrass-mango sauce
2) Seared Honey-Soy Marinated Tuna Steak served over wasabi potato puree with sauteed asian greens, sauteed star fruit and a honey-soy-miso sauce
3) Ancho Chile Chicken served over basmati rice with sauteed brocclini, red pepper coulis and a kiwi-chimichuri sauce
4) Kumquat Marinated Pork Tenderloin served over parsnip-apple puree with creamed spinach, rosemary demi-glace sauce and a candied kumquat.
5) Seared Beef Tenderloin served with sauteed potato, mushroom ragout, red wine sauce and carmelized pineapple.
