Vegetarian Tacos

This recipe is extremely easy/lazy

You'll need:
1 can red kidney beans
box of hard taco shells
spanish rice (use your own favorite or use the recipe I'm going to give you)
taco seasoning
salsa
sour cream (light is good)*
cheddar/monterey jack/other mexican type cheese*
head of lettuce

Figure on about 3-4 tacos per person.

- Preheat the oven to 375ºF and put the taco shells on a cookie sheet.

- Open the kidney beans and pour into a saucepan. Put about 1/4 of the packet of taco seasoning into the beans and stir. Heat them up, and taste to make sure there is enough seasoning; add more if desired. You can add tabasco sauce to make it hot if you like.

- While the beans are heating, put the shells in the oven and set a timer for five minutes.

- Slice up half the head of lettuce into small bits.

- Remove the shells from the oven.

- Open the sour cream and salsa and put a spoon in each. Open the cheese and pour it into a bowl (or shred it if it's a block).

Serve:
Make everyone fix their own :) Beans, rice, sour cream, salsa, lettuce, cheese layered in that order makes the optimum taco.

Spanish rice:
Put some olive oil or other oil into a small saucepan and heat it up. Dice some onion and cook it in the oil until it is translucent.

Take some leftover white rice (I store ours in the fridge, why waste it?) and put in about 1/4 cup of salsa per cup of rice. Stir these into the onions along with some seasoning salt (Lawry's) and some cumin to taste. Taste the rice, and tweak as needed. Now wasn't that easy?

*Vegans can substitute whatever they want or omit these items.
