"Morkovka" for Thu!

Last Friday my friend Natalia brought the salad "Spicy Morkovka Korean Style" to our graduation party. The Russian girls from our class were happy because this salad is usually prepared in almost every Russian family for various events; everyone likes it for being so different from other traditional Russian dishes and salads and also for its outstanding and unforgettable spicy taste. To tell the truth, if you ask a Korean person about this salad, no one would answer anything, I bet none of them has ever heard about this "Korean Morkovka". My another friend Thu asked me about the recipe, so here it is!




Ingredients:

2 LB carrots, peeled
4 large garlic cloves, minced
1 tablespoon coriander seeds, ground in a coffee grinder
1 teaspoon hot pepper flakes (add this ingredient to taste, for me 1 tsp is ok, I like it spicy)
1/2 teaspoon ground black pepper

1/3 cup vegetable oil
3 tablespoons white vinegar
3 tablespoons sugar
1 teaspoon salt

1. Slice the carrots with the help of a special mandoline (slicer). I brought mine from Russia, but you can find it in stores. All you need is to get your carrots cut in the way you see it in the picture.



2. Add minced garlic cloves, ground coriander, black pepper and pepper flakes to you carrots. Don't mix, just leave as it is.



3. Pour vegetable oil and vinegar into a small pot. Add sugar and salt, mix everything and bring it to boil on medium heat.



4. Be careful!!! As soon as the mixture in the pot boils, pour it over the carrots and the spices. Mix everything very carefully. I usually use 2 forks to do it.



6. Put the carrots into a container with a lid and refrigerate the salad overnight. Keep it refrigerated.  Eat it next day. If you can resist the smell, of course, and manage to keep yourself from eating everything right after you prepare it :-)
