Actually, Voldemort planned to feed Wormtail (live) to Nagini in Goblet of Fire - and then he got the news that Barty Crouch Sr. had been killed, so he told Wormtail to relax - that they'd be feeding Harry to Nagini instead.
So yeah - JKR would have a snake eat somebody in her book. But Nagini is an enormous snake - it seems odd to have her wrapped around Voldemort's shoulder.
I agree that it is very OOC for Voldemort to admit - to an assemblage of Death Eaters no less - that he made a mistake. He did acknowledge forgetting the ancient magic when he addressed the DEs in the graveyard in Goblet of Fire though.
But the sentence about "Potter lives due to my errors" - it seems more in keeping with Voldy to say "your errors" and blame the DEs.
I don't know how Voldemort could have heard the prophecy, because it smashed, and no one heard it. And of course Dumbledore is dead. Unless there is something later in the book that says that they kidnapped Trelawney and forced the memory out of her - except that it seems she doesn't remember it. Or that Snape lied and he heard the whole thing. Which would mean all of OoTP was a waste of Voldy's time an I don't see him being okay with that.
Now it actually makes less sense to me than ever before...I went back and re-read the line from that to get the full quote, and it goes:
"I have been careless and so have been thwarted by luck and chance, those wreckers of all but the best laid plans. But I know better now. I understand those things that I did not understand before. I must be the one that kills Harry Potter, and I shall be."
The way it's worded here (or is it just me...) it sounds like this is a relatively recent revelation that's had. How did Snape already know about it in HBP?
In HBP, when Harry is talking to Trelawney, she mentions that Snape was outside the door when she told Dumbledore the prophecy. So, Snape would have heard it from there.
