Gin knows alot about Toshirou through their friendship of Rangiku, unfotunately. I would say that Ichimaru doesn't know what form Toshirou's Zanpakuto takes, at least not yet. He knows the younger man doesn't have complete control of his Zanpakuto.

Also I believe that Ichimaru is starting to realize that Toshirou cares about Jushirou, he'll definately use this information somehow.

Did he never summon the dragon around Rangiku? 8o Because if she knows, Gin would because he plies her with booze until she tells him everything. He may not have actually seen it for himself though.

Ha ha ha, yesh. This little possibility is something that he's definitely interested in looking in to because as far as he knows, Toshirou's never been even vaguely fond of anyone except Ran, and Jushirou (bizzarely) seems friendly enough to give Toshi money for gifts. He wants to know more about this conundrum.

Unfortunately he did summon Hyorinmaru around Rangiku, so yes she would have told Gin all about it.

Sadly Toshirou is known for his antisocial behavior so seeing him follow Jushirou around like a puppy dog...of course Gin would be curious. ^^

Lets face it, Toshi can't keep secrets around Gin anyway. It's far too easy to needle him and have things just slip out, and whenever he starts cursing at Gin it's a pretty good indication that they're getting close to something interesting.

Also, any letters Toshi decides to send to Rangiku, Gin will summararily be opening and reading. Because he is a bastard cares.

If he's been anywhere even near Nahk, he'll have heard of Taiitsukun, Chichiri's cult leader who claims to be the creator of the universe. Despite being crazy, she's also rather powerful and people are afraid of her. If Chichiri mentions Taiitsukun one day, Gin is free to be interested and snoopy about it, but other than that, Chichiri's not really well-known, so eh.

Gin's definitely going to do some hard digging here. He's got that happy little feeling that Shinjiro's hiding something. It may take him a little while, but he will probably be able to find out about Shinjiro's time at the mages guild in Kropmork, especially if he notices anything overtly magical. As for details...you better tell me how much Gin's allowed to know, because he will want to know all of it.

The guild stuff wouldn't be hard for Gin to find out assuming he has fingers in the less then legal dealings~

The guilds were basically working on a magical and psionic suppressor to deal with engineered Persona users. The suppressant is a death sentence as well. And VERY addictive.

Shinjiro was also known to be connected with one Mitsuru Kirijo, daughter of the Kirijo family, who are big business folks in Vohemar. Could the Kirijos and the fake Persona users be connected? Me-be~.

A young man matching his description was also a person of interest in a death in Berum... though it was eventually deemed an accident. The fact that a few witnesses claimed that a giant horseman brought down the building the woman was in was obviously hearsay~
