One of the reasons I was overwhelmed was exactly how Beth said about soy sauce. I read that even raisins have hidden gluten. I didn't know raisins were dusted w/ something that keeps them from sticking together. And that's only one example.
Have you considered enzymes? We bought them from Dr. Houston. He says you can use his enzymes instead of the diet. I would do this before the diet because it's much easier to take a pill before you eat then to alter all food you consume. Tho, he clearly says (I saw him speak a year ago) that you do not do this if you have Celiac. But, you could do instead of the diet or in addition to for things like soy sauce and raisins.
I don't know. It could all be BS. I don't know how people like you and me are supposed to know what is "truth". You'll probably lose weight. You are essentially going on the Atkins diet. I would suspect you would be hungry unless you are eating A LOT of protein. This is another reason I can't put my son on this diet. I can't get him to touch the foods that he would have to eat to survive. Ugh.
I look forward to hearing how this all goes for you. Maybe you will motivate me to give up Gluten, but I don't think me and cheese are getting a divorce...ever.

I'm trying GF because I have severe migraines, vertigo, hypoglycemia and unexplained joint pain that comes and goes on a whim. I've done some casual research on Celiac and I don't think I fit the symptom profile for it.
I'm keenly aware of just how much gluten has infiltrated our diet - wow, it's insane.
Since I've been told to tough it out for a month, the jury is still out on whether or not I'm allergic to or intolerant of wheat or genetically incapable to process the proteins in wheat (celiac). I know that three weeks in, I'm still having headaches, vertigo and blood sugar drops. I also know that when I tried to eat some wheat on Monday, I was INSTANTLY sick. Not "hmm, i wonder if this might be the gluten?" no, it was immediate and undeniable.
