We're locals so we've been several times, but we've still never managed to get into Dervish and Banges or Ollivander's, just because there was no way I was waiting an hour or more with two hot kids.
I do know that the later times we've gone, we've waited until after 4 or so, which seems to weed out a lot of the crowds.
If you're in the market for a wand, Ollivander's is the only place they sell the show, but 2 of the 4 times we've been there, we've seen a travelling cart selling wands without the 'choosing', which is okay too.
I would recommend for the castle ride (Forbidden Journey) that as you leave the locker area, ask the staff for the "castle tour" line (which means you are not going on the ride, just seeing the castle). That allows you to go through the castle at your own pace, with almost no one else in your line, so you can linger and really appreciate the scenery and film clips and moving portraits. This line exits right before the ride. Then, go back in, ask the staff for the "single rider" line, and move through the line for the ride really quickly. The problem with the normal line for the ride is that it takes forever getting into the castle and the interesting scenery, and then the line starts moving along really quickly and you get pushed past all the interesting parts

The only "ride" we got to was the Forbidden Journey/Hogwarts ride. We had to use the "child swap" feature, to pass my 15 month old back and forth, since she was far, far too small for the ride. But it was great! I got a little dizzy/motion sick, but thoroughly enjoyed myself. ^^
We also got to see the Ollivanders mini-show, and it was adorable. :) Probably not worth waiting in line for an hour, but... and I loved that there was someone outside Dervish and Banges stamping postcards with a Hogsmeade stamp. That was amazing.
