Mojito cupcakes

Recently a friend and I were discussing our love of Mojitos and it made me wonder if there was such a thing as Mojito Cupcakes. And there is. Which is wonderful because Oh. My. God. Mojito Cupcakes are AMAZING!




There were quite a few recipes for these cupcakes but I ended up cobbling this one together myself. The basic cupcake was modified from a Betty Crocker recipe for lemon cupcakes.

Ingredients

360 g plain flour
2 1/2 tsp baking powder
1/2 tsp salt
225 g butter, softened
1 1/4 cups white sugar
3 eggs
2 Tbs grated lime peel
1 Tbs lime juice
1 tsp vanilla
2/3 cup milk

2 Tbs rum
2 sprigs mint

Frosting
4 cups icing sugar, sifted
250 g butter, at room temperature
2 Tbs lime juice
2 Tbs rum

Preheat the oven to 180˚C (350˚F) and lay out a muffin tray with cupcake wrappers.

Mix flour, baking powder and salt into a bowl and set aside. In a mixer beat butter for 30 seconds, then add sugar gradually, beating well after each addition. Beat for two minutes, then add eggs, one at a time, beating well. Beat in lime peel, juice and vanilla essence. On low speed alternately add flour and milk. Beat until just blended.

Divide batter amongst muffin cups, filling about 3/4 full.

Bake for 20 to 25 minutes or until golden brown and a toothpick inserted comes out clean. Cool in pan for five minutes.

Whilst the cupcakes are baking combine rum and mint in a small pan and heat until rum is heated through but do not allow to simmer. Remove from stove and cover.

Remove cupcakes from pan and brush with warmed rum. Leave to cool. Decorate with frosting and a sprig of mint.

Frosting: Beat butter until soft. Add icing sugar, a little at a time, beating well. Add the lime juice and rum and beat until well combined.
