"Fresh, organic shredded carrots soaked in brown sugar, mixed with spices and flour, then baked up moist and delicious. Topped with cream cheese icing and rum-soaked raisins."
Spicy, sweet rum with a hint of tangy raisins is drydown. As Carrot Cake dries, I smell more of the spices--nutmeg, cinnamon and clove. The rum raisins overpower any carrot or cream cheese note. I will say that spices are completely foodie. There's no hint of resin/incense.
It takes a full four hours for the cream cheese note to develop. It's sticky, gooey sweet. The throw weakens a bit by then, though.
Carrot Cake is delicious and so spicy-sweet. I never caught any carrot, however. This more like spice cake on me than carrot cake. Still, very yummy!
