There are some really cool things to do. You are not a gambling man, so I'll leave those types of locations out. Since you have the money, I know there are tons of really cool shows. I believe Cirque du Sol is there at the moment. Also you can dive with sharks at the Shark Reef Aquarium. It's wicked cool. It doesn't come to mind for most people, but you can take a desert tour. I forget what the agency who does this is, but as the hotel concierge. Don't forget to enjoy the hotel's spa. They all have them there and are completely tops.
